A busy Wednesday calls for an easy dinner! Remade my spaghetti squash boats from the other night with leftover sauce I had an served it with a simple fall salad.

Work has been crazy lately so if I can double a recipe to heat up later in the week I will! The pasta sauce from the other night is a perfect example. All I had to do is roast a squash and some other veggies for my salad and this dinner was so simple! I was able to work while everything was in the oven, multi tasking at its finest!

🍁Followed my pumpkin spaghetti squash boats from the other night
🍁Fall Roasted Veggie Salad:
-cut up acorn squash and cauliflower. Toss with olive oil spray, salt and garlic. Bake at 400 for 30 minutes.
-Top bed of spring greens with roasted veggies, red onion and pomegranate
-enjoy!
