Anyone tired of cooking 🙋🏼‍♀️

Veggie curry is my all time go to when I don’t want to cook but also not wanting to eat out. I either have fresh veggies laying around dying to be used or I pull out the bag of frozen stir fry veggies from the freezer and tbh I can’t ever tell the difference. This meal takes less than 30 minutes, full of vegetables and tastes delicious!

What you’ll need:
•variety of fresh or frozen vegetables. This was green beans, onion, carrots, potatoes and bell peppers
•1 can of full fat coconut milk (the lite is just watered down, buy the full fat and then use 1 can full fat, 1 can water or broth)
•2 tablespoons of thaikitchen red curry paste
•1 tablespoon fish sauce (can omit if vegan)
•sriracha and green onion to garnish
•grain of choice or cauliflower rice to serve over

How to make it:
•if using frozen, sauté vegetables until defrosted. If fresh just start getting them cooking.
•stir in curry paste until all veggies are coated
•pour in coconut milk and then use can to fill up with water and pour in
•add in fish sauce
•cover and let simmer for 15 minutes or until vegetables are fully cooked through
•serve over grain of choice or cauliflower rice
•top with sriracha and green onions
•enjoy!
