Chickpea Smash on toast 🌱

I got so many messages for my recipe on this & I’ve been making this a few times a week that it deserved a spot on the feed. This is great for meal prep (can be made a few days in advance) or if you just have 5 min to throw lunch together in between meetings

I love a good tuna salad but I think this chickpea salad is better plus it’s cheaper and it won’t stink up your kitchen like a can of tuna does 😝

I love to make this and serve over a bed of greens, in a wrap or on some toast, the possibilities are endless (& delicious)

What you’ll need:
•1/2 cup of chickpeas
•1 tbsp mayo
• oldbay_seasoning
•any add ins you want: I like tomatoes, onions, capers, celery, bell pepper, carrot

How to make it:
•smash chickpeas with a fork
•add in mayo and oldbay_seasoning
•stir in chopped veggies
•serve over greens, in a wrap or on toast
•enjoy!
