Classic Kelly Salad 🥗 I swear my quarantine workdays are way crazier than when I was working on campus. Most days I don’t have a second to eat until 2pm and I am usually just trying to throw whatever I can into my mouth. One thing I’ve been doing to help me make better decisions is prepping my food! I’m not a huge meal prep person because I like my food prepared fresh but having elements of my meal prepared makes throwing together a salad like this so easy! I’ve been bulk making grains, chopping my produce and taking note some quick and healthy meals I can throw together in between meetings so I don’t have to think about it in the moment. It’s helped me so much! If you’re overwhelmed during the day and are turning to junk food (I know I was) try this and see if it helps!
