Coconut Salmon with Mango Salsa over cilantro cauliflower rice 🥥🥭

This sun is giving me all the summer vibes so I had to make this meal as it transports me to a tropical island

This is my specialty meal and has been my go to impress you meal since I was in college. I actually can’t believe I’ve never showcased it on here!

It’s easy to make and insanely flavorful. It’s always been a crowd pleaser – please make it and let me know what you think!

What you’ll need:
mango salsa:
•mango (I used ataulfo because they are in peak season!)
•bell pepper
•red onion
•tomatoes
•cilantro
•jalapeño
•lemon (or lime)
•salt

Coconut salmon:
•salmon
•unsweetened coconut
•egg

Cilantro cauliflower rice:
•riced cauliflower
•cilantro
•lemon (or lime)
•salt

How to do it:
Mango salsa:
•chop up all the mango and veggies and stir well. Let sit for 30 minutes (or overnight) to really soak in all the flavor

Coconut Salmon:
•dredge salmon in egg
•coat with coconut
•air fry at 350 for 12 minutes

Cilantro cauliflower rice:
•over medium heat, sauté riced cauliflower until warmed through (about 5 minutes). Salt to taste.
•once cauliflower has cooked, squeeze in lemon (or lime) juice.
•take off heat and mix in cilantro

Plate the rice and top coconut salmon and serve with mango salsa
