Dukkah Salmon with Roasted Carrots🥕

This is hands down my new favorite way to make salmon. I made it for lunch on Tuesday and have been craving since. Also ate the leftovers cold straight from the fridge and it was still fire. It’s easy and there is so much flavor – it’s a must make!

What you’ll need:
•piece of salmon (this was 6oz)
•1/4 cup plain Greek yogurt
•4 cloves of garlic, chopped finely
•1/4 cup Dukkah seasoning from traderjoeslist
•honey and lemon juice, to drizzle
•parsley, to garnish
•olive oil spray
•salt and garlic powder

How to make it:
•preheat oven to 425
•slice carrots into sticks, coat with olive oil spray and toss with salt and garlic powder. Place in oven and bake until tender (I like mine overdone)
•in bowl, mix Greek yogurt with garlic and a little salt
•spread over and coat salmon
•evenly spread Dukkah seasoning over Greek yogurt mixture
•cover with foil and bake for 15 minutes. Uncover and broil for 5
•drizzle with honey and juice of 1/2 lemon
•garnish with parsley
