Easy Veggie Enchiladas🔥

Now that activities are starting to pick up and I’m out and about more often, I am leaning heavily towards easy meals. Not only was this meal incredibly easy to put together, it was so delicious and full of vegetables!

Warning: the frozen Mexican style cauliflower is spicy but it’s seriously one of my all time traderjoeslist favs! If you can handle a little heat, you must pick this item up!

dEATS🔥
What you’ll need:
(Everything is traderjoeslist – swipe to the 3rd picture for a photo of ingredients)
•tortillas
•enchilada sauce
•1 package of Mexican style cauliflower rice
•can of black beans
•can of corn
•cheese
•to top: cilantro, sour cream or Greek yogurt, avocado

How to make it:
•preheat oven to 350
•in pan, cook cauliflower rice, once cooked add in black beans and corn. Stir well
•fill each tortilla with mixture and roll up
•cover with enchilada sauce
•top with cheese
•bake for 20 minutes, until cheese is melted and tortillas look crisp
•top with cilantro and serve with sour cream or yogurt and some avocado
•enjoy!
