Eggplant Milanese Salad 🍅🍆

I have been loving salads lately and this might be the best one I’ve made in awhile. It seems fancy, like something you’d order out at an Italian restaurant but its made with minimal ingredients and so easy!

What you’ll need:
(Everything is from traderjoeslist )
•eggplant
•1/4 cup panko seasoning
•Italian seasoning
•egg
•arugula
•tomatoes
•shaved parm
•balsamic glaze

How to do it:
•peel eggplant, cut into rounds and salt it generously. Let sit for 10-15 minutes to draw out moisture (this is optional but will make it better so if you have the time, do it)
•dry off eggplant and wipe off salt
•crack egg in bowl, whisk and add a tbsp of water
•mix 1/4 cup of panko with a generous serving of Italian seasoning and mix well
•coat eggplant first in egg mixture then panko and set on prepared baking sheet, repeat until all rounds are covered
•bake in oven for 15 minutes, flip and bake for another 15 until crispy
•to make salad: put down arugula, top with eggplant rounds, tomatoes, shaved parm and drizzle that balsamic glaze
•enjoy!
