Fall Salad 🍂🍁

I’ve been making this salad once a week for Sean and I and we really can’t get enough! I love the pairing of roasted squash and cauliflower, it’s so delicious! We’ve been having it as a side salad but add some protein and you have yourself a delicious meal!

dEATS (0💚💜💙)
-chop acorn squash into small cubes and cauliflower into small florets. Coat with olive oil spray, salt, pepper and garlic powder and roast in oven at 400 for 45 minutes
-serve roasted veggies over spring mix and top with red onion and pomegranate seeds!
