Fiesta Quinoa Salad 🎉🌶🫑

This salad is seriously party in your mouth it is full of so much flavor 🎉It took me less than 25 minutes to cook from start to finish (including cooking the quinoa!). This is a meal prep dream as it’ll last you a few days in the fridge as well. You can eat it hot or cold (it’s bomb both ways). You can add additional protein like shrimp or chicken and you can also add some cotija or feta cheese to give it more pizazz if you want – this salad is super customizable so take this base recipe and do what you will, you really can’t go wrong!

What you’ll need:
•4 cups of quinoa (uncooked)
•water or broth to cook quinoa
•1 can black beans
•1 bag or can of fire roasted corn
•1 jar of salsa
•1 red onion, chopped
•2 bell peppers, chopped
•bunch of cilantro, chopped

How to make it:
•cook quinoa. I make mine with broth in my instantpot
•once quinoa is done cooking, mix with beans, corn and chopped veggies. Stir in jar of salsa
•top with cilantro
•enjoy!
