Fresh Spring Rolls ☀️

It’s finally starting to feel like spring in the PNW and I couldn’t be happier. I was also reminded by thecuttingveg that it’s time to make fresh spring rolls again!

The best part about spring rolls is you can use any vegetables you have. I’ve made these with so many different combinations and have never gone wrong. Also don’t be discouraged by wrapping! My first few always look a little wonky but you definitely get the hang of it (I’ll post a reel tomorrow showing how it do it)

What you’ll need:
•rice paper wrappers
•tofu
•bomba sauce (traderjoeslist )
•watermelon radishes, sliced thin
•carrots, julienned
•green onion
•beets, thinly sliced
•cilantro
•my maple bomba tahini, to dip

How to do it:
•make crispy tofu. I cut my tofu into strips, coated in bomba sauce and air fried for 15 minutes
•once done, line up all veggies
•submerge rice paper in water for 10 seconds, until softened
•place veggies and tofu in middle and roll up
•cut into fourths
•serve with maple bomba tahini sauce
•enjoy!
