Grain Bowl Salads🥗

I shared this grain bowl on my stories last week and figured it deserved a spot on the feed because most of my weekday lunches look like this. They take 5 min to put together so perfect when I’m in back to back zoom meetings

I like to batch make grains for the week over the weekend (check out my reels for how to make quinoa and brown rice in the instant pot) and I always have some veggies that are easy to throw in, like tomatoes and my current obsession, lovebeets

Hope this helps provide some inspo if you’re burnt out trying to think of easy, healthy and delicious lunch ideas!

What you’ll need:
•quinoa
•arugula
•tomatoes
•mini sweet peppers
•balsamic beets ( I used lovebeets )
•green olives
•slivered almonds
•salt and pepper
•lemon juice

How to do it:
•place all your ingredients in a bowl
•mix well
•enjoy!
