Grilled Veggie Kale Salad with Crispy Rice 🥗

I made this for dinner last night and it was seriously the best salad I’ve made in a long time (maybe ever?). The grilled veggies paired with the crunchy rice and tangy vinaigrette is just perfection

The best part of this salad is by far the crispy rice. It’s like breadcrumbs but better (especially for my gluten free peeps!). It’s super easy to make (I’ll post a reel tomorrow) but it’s definitely going to be making many appearances in my upcoming meals!

What you’ll need:
•kale
•shaved Brussels sprouts
•zucchini
•asparagus
•shallots
•goat cheese
•brown rice
•olive or avocado oil spray
•salt
•garlic powder
•lemon juice
•dijon mustard
•white wine vinegar
•olive oil
•salt and pepper
•honey

How to make it:
Make crispy rice:
•spray cooked brown rice with oil
•air fry at 400 for 15 minutes, tossing every 5

Salad:
•tear kale and shred Brussels sprouts, massage with lemon juice and salt and pepper
•grill zucchini and asparagus (can roast in oven as well). I tossed zucchini and asparagus in olive oil with salt pepper and garlic powder
•top kale and Brussels sprouts with grilled veggies, crispy rice, thinly sliced shallots and goat cheese

Tangy dijon vinaigrette
•mix 1 teaspoon Dijon mustard with 1 tablespoon of olive oil, 1 tablespoon of white wine vinegar and 1 teaspoon honey. Add salt and pepper to taste. Mix well and drizzle over salad
•enjoy!
