Happy February!

I don’t usually post my monthly goals but I figured it’ll help me stay accountable if I put it out there for everyone to see. This is what I’m getting after this month:

•get my website (healthykel.com) up and running
•read 5 books
•keep screen time under 5 hours a day
•eat breakfast daily

Speaking of breakfast, I know I am more focused and less hungry the rest of the day if I take 5 minutes to make a solid meal before my first meeting so I’m making it a priority this month. This breakfast bowl has been my fav! I can premake the eggs, mushrooms and roasted tomatoes on Sundays so this bowl take less than 5 minutes to throw together in the morning and it’s so so delicious!

What you’ll need:
•olive oil spray
•2 eggs (vitalfarms )
•2 roma tomatoes
•handful of baby bella mushrooms
•teaspoon of balsamic vinegar
•1/2 lemon
•hemp seeds, to garnish

How to do it:
For tomatoes:
•preheat oven to 450
•slice tomatoes length wise, coat with olive oil, salt and garlic powder and place in oven.
•bake for 30-45 minutes, until they begin to caramelize

For mushrooms:
•slice mushrooms and sauté with some olive oil and salt on medium low heat for 10 minutes, until soft

For soft boiled eggs:
•using instantpotofficial place eggs and 1 cup of water in pot
•pressure cook on high for 4 minutes, quick release
•let cool in ice bath for 2-5 minutes
•peel and slice lengthwise

Breakfast bowl:
•toss arugula with drizzle of balsamic vinegar, top with mushrooms, tomatoes, eggs and 1/2 avocado squeezed with fresh lemon juice and coat with hemp seeds
