Harissa Roasted Cauliflower over a Couscous Salad with tahini green goddess dressing 🌱

A friend sent me this meal idea after she made it in her food delivery box. I had all the ingredients for it and wanted to put my own spin on it and what I came up with was absolutely delish. Both me and Sean scarfed this down and will definitely be making it again.

What you’ll need:

•head of cauliflower
•1 tablespoon harissa paste (I used mina )
•1 cup couscous
•bunch of kale, chopped
•a few medium carrots, chopped
•2 small yellow onions, chopped
•cherry tomatoes
•2 dates, chopped
•1 tablespoon tahini
•2 tablespoons green goddess dressing
•chopped almonds and cilantro to garnish

How to make it:
To make cauliflower:
•preheat oven to 425
•chop cauliflower into small pieces and coat with harissa paste
•roast for 30-45 minutes, until nice and well done

To make couscous:
•toast couscous for about 5 minutes and then add 1.5 cups of boiling water to pan. Bring to simmer and simmer for 15 mins with a lid on
•once done, remove from pan and set aside
•in a pan, sauté carrots and onion for about 5 minutes. Add the couscous back in and add in chopped kale and dates. Mix well and add in 1/2 dressing

Green goddess tahini dressing:
•mix the tahini and green goddess dressing together

To assemble:
•split couscous and veggie mixture into 2 bowls. Top with cauliflower, tomatoes, chopped almonds, remainder of dressing and cilantro
