Kelly’s Killer Kale ~ fall vibes ~ 🍂
Got some beets, figs and acorn squash in my imperfectfoods box this week and had to put them all in a salad together. Throw in some crispy chickpeas and goat cheese over kale and it turned out amazing!
-tear kale and massage with lemon juice, salt and pepper
-toss beets and squash with olive oil spray, salt and pepper and roast at 400 for an hour. When you roast acorn squash this long you can eat the skin and it’s delicious!
-put chickpeas in air fryer and coat with olive oil spray, salt and pepper and cook at 400 for 15 minutes, tossing half way.
-cut figs in quarters and chop some red onion
-place over massaged kale and top with goat cheese
