Can’t get enough of my kale salad with roasted veggies on top! I’m also so excited it’s pomegranate season because they are my fav!

-tear kale and massage with lemon juice, salt and pepper
-toss beets, mushrooms and squash with olive oil spray, salt and pepper and roast at 400 for an hour. When you roast acorn squash this long you can eat the skin and it’s delicious!
-put chickpeas in air fryer and coat with olive oil spray, salt and pepper and cook at 400 for 15 minutes, tossing half way.
-place over massaged kale and top with red onion, tomatoes, pomegranate seeds and fat free feta cheese
-enjoy!
