👩🏼🍳 Le Dîner du Soleil ☀️ Almost weekend ! What are your dinner plans ?
I feel like a Pumpkin Butternut Squash Soup & Eggplant|Zucchini|Tomato Quiche 💛🧡❤️
🛒 For the soup:
– Half of a pumpkin
– Half of a butternut squash
🔸Peel and chop the vegetables in large chunks
🔸Let it boil in water for around 30 min. The water shall cover the veggies
🔸Remove from heat and use a stick blender to blend until smooth
And that it’s ! Super healthy and tasty !
🛒 For the quiche:
– 1 premade dough
– 1 eggplant
– Half of a zucchini
– 2 tomatoes
– 2 eggs
– 15 cl of heavy cream
– 10 cl of milk
🔸Cook the veggies with olive oil for at least 20 min, make sure to remove as much water as possible
🔸In the meantime pre-bake the dough for 10 min in a preheated oven at 180C (360F) – Note: before that prick holes all around the bottom crust with a fork
🔸Mix the eggs, the cream, the milk and pepper
🔸When all done, lay the veggies on the dough and pour the filling
🔸Bake for 30 min in a preheated oven at 180C (360F)
