Mixed Berry Shortbread Bars 🫐

These are protein packed, no added sugar and gluten free!

I’ve had danishealthyeats blueberry shortbread bars saved for so long I finally decided I had to make them. I made some tweaks to her recipe but the inspo is 100% Dani

Shortbread Base:
I used danishealthyeats recipe (check it out on her Instagram) but swapped wholeearthsweetener for maple syrup and added 2 scoops of vitalproteins for more protein

Mixed Berry Chia Jam:
•over stovetop boil down 1 cup of frozen (or fresh) berries
•once cooked down add 1 tablespoon of wholeearthsweetener monk fruit and 2 tablespoons of chia seeds. Mix and let sit for 10 minutes until thickened

Cream cheese glaze:
•mix 1 oz of cream cheese with 1 tablespoon of swervesweetie and 1 tablespoon of nutpods

Assembly:
•once shortbread has baked, spread jam over shortbread and freeze for 15 minutes. Drizzle with cream cheese glaze. Cut into 16 bars and store in fridge
•enjoy!
