The most perfect summer meal, my coconut salmon with mango salsa paired with a Big Wave beer from Kona Brewing Co®.
I am loving having dinners outside on our rooftop deck this year. It is finally feeling like summertime in the PNW, so we are enjoying every moment we can outside. Meals are more special when enjoyed outside with friends and with a delicious beer from KonaBrewingCo.
My coconut salmon with mango salsa is a hit for everyone, it’s one of my favorite meals and I have yet to find someone who doesn’t love it. The ingredients are easy to find, I picked up everything we needed for dinner at our local Kroger, but you can also find KonaBrewingCo Big Wave at many other locations ! I hope you give this salmon and Kona Big Wave a try this summer!
What you’ll need:
•mango (I used ataulfo because they are in peak season!)
•lemon (or lime)
How to do it:
•chop up all the mango and veggies and stir well. Let sit for 30 minutes (or overnight) to really soak in all the flavor
•dredge salmon in egg
•coat with coconut
•air fry at 350 for 12 minutes
Serve with an iced cold Kona Big Wave and enjoy!
