My ideal Monday night: making a really extra kale salad, eating it while watching schittscreek , taking a long bath and being in bed before 9, I guess this is what my late twenties are ๐Ÿ˜‚

This kale salad was amazing, full of fall flavors that just worked so perfectly together and how pretty is it?!

dEATS (2๐Ÿ’™๐Ÿ’œ5๐Ÿ’š)

-tear kale and massage with lemon juice, salt and pepper
-toss delicata squash with olive oil spray, salt and pepper and roast at 400 for 30 minutes.
-put chickpeas in air fryer and coat with olive oil spray, salt and pepper and cook at 400 for 15 minutes, tossing half way.
-place chickpeas and squash over massaged kale and top with red onion, sliced honeycrisp apple, pecans and pomegranate seeds
-enjoy!
