Never underestimate how good a grain salad can be 🌱

I’m all about the simple meals this week and this was the perfect lunch for me and Sean today. It’s not complicated, got in some veggies and tasted absolutely delish! Proof that healthy meals don’t need to be complicated or boring!

What you’ll need:
•Israeli couscous (I got mine at traderjoeslist )
•shredded Brussels sprouts (I shredded whole sprouts for this)
•slivered almonds
•chopped parsley
•pomegranate seeds
•vinaigrette of choice (I used the orange muscat vinegar from traderjoeslist )

How to make it:
•prepare couscous per directions on box
•over medium heat, sauté brussel sprouts with salt and garlic powder until cooked through
•once couscous and Brussels sprouts are done cooking, mix in bowl and add parsley, pomegranate seeds, slivered almonds and vinaigrette
•enjoy!
