Purple Cauliflower & Pomegranates 🌱

I am LOVIN the winter produce I’m getting in my imperfectfoods box right now. The deep purples and reds are making my plates extra colorful and when my veggies are extra pretty I’m way more likely to eat them more often.

I ate this plate as a snack today and it was so delicious. Would also be an amazing side dish or the base of a salad

What you’ll need:
•head of purple cauliflower (you can sub for any color)
•olive oil
•salt and garlic powder
•pomegranate seeds
•tahini
•parsley, to garnish

How to do it:
•preheat oven to 425
•cut cauliflower in small florets
•toss with olive oil, garlic powder and salt
•bake for 15 minutes, toss and then bake for another 5
•add pomegranate seeds, drizzle with thetahinigoddess tahini and garnish with parsley
•enjoy!
