👩🏼🍳 RECIPE: Raisins Oats Pecans Cookies
Damn I succeed to get a great raw&chewy cookie. The oats helped to have this texture.
Tips to get really thick cookies:
1️⃣ Use baking powder instead of baking soda
2️⃣ Use a hand mixer instead of a stand mixer
3️⃣ When dividing the dough to form shapes do not compact it, the dough should be airy
4️⃣ Chill for at least 30 min before baking
🛒For 8 big cookies:
– 100g of brown sugar
– 75g of butter
– 1 egg
– 200g of flour
– 1/2 of a baking powder packet
– 1 tsp of salt
– 1 tsp of cinnamon
– 125g of raisins
– 1 tea bag
– 70g of oats
– 70g of pecan nuts
🔸In a bowl, pour the tea on the raisins and let rest for at least 30 min
🔸In a large mixing bowl add the butter and sugar. Using a hand or stand mixer cream the butter and sugars together until fluffy.
🔸Add in the large egg, mix until combined.
🔸Add the flour, baking powder, salt and cinnamon. Mix until combined. The dough might seem to be in crumbles.
🔸Pour in the oats, raisins (drained) and pecans and use your hands to mix them in. This will bring the dough together. Be gentle though. We don’t want to compact the dough too much. We want to keep it as airy as possible.
🔸Divide the dough into 8 pieces. Gently form into cookie form. Place on the baking sheet.
🔸Chill the cookie dough for around one hour.
🔸Bake the cookies for about 18 minutes in a preheated oven at 180C (360F). The outside shall be golden brown.
Let the cookies chill on the baking sheet for at least 10 minutes.
