👩‍🍳RECIPE: Rum-Raisins Carrot 🥕 Cake

I love rum-raisin flavor and carrots so I tried to mix those in a recipe and… it’s just delicious ! So here you go !

For 8 persons:
– 200g of flour
– 1/2 packet of baking powder
– 1 teaspoon of cinnamon
– 250g of carrots
– 80g of brown sugar
– 30g of white sugar
– 1 packet of vanilla sugar
– 2 eggs
– 125g of butter
– 125g of raisins
– Rum
– 60g of walnuts

1. The night before pour the rum on the raisins in a bowl and let rest in the fridge
2. The morning after, mix the rum-raisins with the carrots, walnuts and brown sugar. Rest for 30 minutes
3. Mix the butter with the white and the vanilla sugar and add one by one the eggs
4. Add to the mix the flour, baking powder and cinnamon
5. Finally add the Rum-raisins-carrots mix. Make sure to remove a little bit the juice
6. Bake in a preheated oven at 180C (355F) for 50 minutes
