Roasted Curried Cauliflower Salad 🌱

I’ve always loved a good curried salad so figured I’d try to make my own with what I had on hand and it turned out amazing. I just love the flavor profile and the texture combo between the roasted cauliflower, quinoa and crunchy crisp veggies. This is definitely a must make and perfect for a

dEATS🌱
What you’ll need:
•1 head of cauliflower
•1 cup of quinoa (cooked)
•avocado oil
•2 tbsp curry powder
•1 tsp garlic powder
•2 tsp salt
•2 stalks of celery
•1 red bell pepper
•1/4 red onion
•1 large carrot
•3 dates, pitted
•cilantro and slivered almonds to garnish
•1 tbsp mayo (I am loving primalkitchenfoods avocado oil mayo)
•2 tbsp plain Greek yogurt
•juice of 1 lemon

How to make it:
•preheat oven to 425
•cut cauliflower into small florets. Coat with avocado oil spray and toss with 1 tbsp curry powder, 1 tsp garlic powder and 1 tsp salt
•roast in oven for 30-45 minutes until tender
•meanwhile, chop all your veggies and dates
•mix in a bowl with cooked quinoa and add roasted cauliflower
•to make dressing: combine 1 tbsp mayo and 2 tbsp Greek yogurt with juice of 1 lemon, 1 tbsp curry powder and 1 tsp salt. Mix well and pour over salad. Mix it all together
•plate it and garnish with slivered almonds and cilantro
•enjoy!
