Saturday Brunch feat the quarantine frittata 🍳 no better way to use up veggies than to throw them in a frittata. Best part is you can switch it up every single time so you never get bored with it. It’s become a weekly staple in the Q 🥔

Sauté any veggies you have on hand and place on bottom of frittata dish. Today I used spinach and rachlmansfield simple caramelized onions. Whisk 6 eggs and 1/2 cup nonfat Greek yogurt together, mix in 1/4 cup shredded cheese. Add some salt and pepper. Pour over veggies and top with more cheese. Bake at 425 until center no longer giggles (took about 20 min for me). Serve with roasted rosemary breakfast potatoes and fresh fruit 🍓
