Shrimp Fajita Taco Salad

I am so happy to be back in my kitchen whipping up my salads. After eating out for the majority of my meals, I’m feeling fluffy and not my best so focusing on fueling my body with lots of veggies and protein these next few days. This fajita salad was the perfect meal, highly recommend making!

-fajita veggies: slice up 3 bell peppers and 1 yellow onion and toss with 1/2 teaspoon each of smoked paprika, cumin, chili powder, salt and garlic and cook over stove on medium until tender
-shrimp: coat in salt, paprika, garlic and cumin and cook on medium for 2 min each side
-assemble the salad with chopped romaine, mango, cherry tomatoes, cilantro, and sliced avocado.
-cilantro lime dressing:in food processor combine 1/2 avocado, 1 tablespoon Greek yogurt, 1 jalapeño, 2 tablespoons cilantro and a pinch of salt. Makes 4 servings at 1 point each
