Shrimp Fra Diavolo with Oodles of Zoodles 🍝 ever since I switched to purple I stopped used the veggie swaps because whole grains were zero. While I love a good plate of whole grain pasta, I didn’t really want it so I made some whole wheat spaghetti for Sean and zoodles for me. I forgot how much I love zoodles and how I never feel weighed down after eating a big plate. Will definitely be adding zoodles into the rotation regularly again!
-cook 4oz shrimp, set aside
-sauté 1 yellow onion until translucent
-add 3 chopped garlic cloves, 1 tablespoon oregano, 1 tablespoon dried basil, 1 teaspoon red pepper flakes and 2 tablespoons tomato paste, stir together and cook for 1 minute
-add 14oz can diced tomatoes and cook on low until liquid evaporated
-spiralize 2 medium zucchini (I use the inspiralized blade d) and cook over medium heat until liquid evaporates from zucchini (drain any liquid from pan)
-toss in tomato sauce mixture, add in shrimp
-top with 1/2 oz traderjoeslist shredded parm cheese
