Shrimp Summer Rolls 🍤🍤 I’m sweating just typing this it’s so dang hot here. There’s zero way I’m making anything hot today so summer rolls were a must for lunch! I love that I can customize these for whatever we have laying around. I made 2 types: mango cilantro and peach basil and both were bomb. I think I’ve finally mastered the summer roll wrapping which is no easy feat!

Shredded cabbage, cucumber, shrimp, jalapeño, green onion and either peaches and basil or mango and cilantro rolled up in rice paper (1 smartpoint per wrapper). Served with a peanut, hoison sauce 4 for my plate
Peanut Hoison sauce:
Mix 2T powdered peanut butter with 1T soy sauce, 2T hoison sauce, 2t sriracha, dash of fish sauce and some fresh grated ginger. Makes 4 servings at 1 each
