Spinach Artichoke Spaghetti Squash Bake feat my newest cooking friend, patthespatula

After the stress eating last night I needed lots of veggies but also still needing some comfort food. This meal was perfect for both and makes a ton so perfect for meal prep!

dEATS (makes 8 servings 2💜💙5💚)
🌱Preheat oven to 400 degrees
🌱In food processor, blend up 1 16 oz container of fat free cottage cheese until smooth, place in bowl and set aside
🌱Heat olive oil on skillet at medium heat, add 1 chopped yellow onion, cook until soft
🌱Add 4 cloves of minced garlic and cook until fragrant
🌱Add 16 oz bag of defrosted frozen artichoke hearts and 16oz bag of defrosted frozen chopped spinach and cook until heated through
🌱Put spinach artichoke mixture in food processor and pulse until chopped fine
🌱Add mixture to cottage cheese and stir. Salt, to taste
🌱Add in cooked spaghetti squash (I used my instant pot) mix well
🌱Pour mixture into 9×13 casserole dish and top with mozzarella cheese
🌱Bake for 45 minutes or until cheese begins to brown
🌱Enjoy!
