Spinach Lasagna and all the greens 🌱 The perfect Sunday night dinner. I think lasagna might be my top 5 favorite dinners. What’s not to love about carbs and cheese?! For 3 a serving I can enjoy my favorite dinner anytime!

-Preheat oven to 425
-in blender, blend 28oz crushed tomatoes, 5 garlic cloves, handful of basil, salt and red pepper flakes, set aside
-in food processor blend 1 container of fat free cottage cheese, set aside in bowl
-in pan sauté 1 white onion, once translucent add 3 diced garlic cloves. Add 15oz spinach (I used frozen) and cook all the moisture out. Bring to food processor and chop.
-mix spinach mixture with whipped cottage cheese. Add salt and pepper to taste.
-in casserole pan, layer some tomato sauce and whole wheat lasagna noodles, 1/2 of the cottage cheese mixture and cover with red sauce. Repeat once more then cover with sauce and shredded mozz.
-bake covered for 18 min, uncover and turn and bake for another 15 until cheese is golden brown
-I cut mine into 6 large squares at 3 points each on purple
