A few weeks ago, Sean challenged me to start having slow mornings. As someone who normally gets up and immediately works out, its something I’m not totally comfortable with. I like to start my day with a sweat but the past two Sundays I’ve slept in, read in bed and just chilled. It’s been ah-mazing. It was a nice reminder to myself that I need to slow down and rest and rest days don’t need to be filled with low impact activity.
I’m also proud of myself for allowing myself to have pancakes even though I didn’t run 10 miles or do a hard peloton ride. I might do a low impact ride or a yoga flow later but I might do absolutely nothing and that’s ok. Even on rest days, your body still needs food. I still struggle with this, I was in that mindset for over 15 years but the more I practice it, the easier it becomes. If this is something you struggle with or have in the past, I see you.
I also figured out how to make the boxed protein pancakes from traderjoeslist taste good! After a little trial and error I got myself the perfect stack🥞

What you’ll need:
•3/4 cup of traderjoeslist protein pancake mix
•1 extra ripe banana
•3/4 cup of liquid. I did 1/2 nutpods 1/2 water
•pinch of cinnamon
•dash of vanilla
How to make them:
•mix all your ingredients together in bowl
•let sit for 5 minutes (this is important as it’ll make them fluffy!)
•using 1/4 cup, pour over griddle
•once bubbles form at the top, flip and let other side cook
•top with some butter and maple syrup
