Tahini Tumeric Cauliflower and Crispy Chickpea Salad 🥗

I made this salad during my salad week and it was so good I had to make it again. It might be the best salad I make (and that’s saying a lot because I make bomb salads). This is the kind of salad you spend $20 at a restaurant for but costs only a few bucks for all the ingredients (especially if you got them all at Trader Joe’s like I did)

🌱Cauliflower: cut head into small florets, spray with olive oil and toss with 1 teaspoon turmeric, 1 teaspoon of cumin, 1/2 teaspoon pepper and 1/2 teaspoon of salt. Bake at 450 for 45 min
🌱Chickpeas: spray with olive oil and toss with salt and pepper, bake on air fryer at 400 for 15 minutes, tossing every 5
🌱Lemon Yogurt Tahini Dressing: Mix 2 teaspoons of tahini with 2 teaspoons of non fat Greek yogurt and 1/2 lemon, and a little salt and pepper. Add a little water to get desired consistency
🌱Serve on top bed of arugula with thinly sliced red onion and pomegranates for a tart punch
