Tater Taco Tuesday 🍠🌮 Sweet Potatoes are my favorite carb ever, especially on days when I do a ton of cardio. These taters are vegan and full of healthy fats, protein and carbs 🔥

Roast sweet potato at 400 for an hour. For the meat: pulse 1 can of chickpeas with 1/4 cup of walnuts. You want the texture to be meaty, don’t over pulse! Combine in a pan with 1T chili seasoning, 1t smoked paprika, 3t cumin, 1t salt and 1/4 cup of water. Stir until heated. Once the taters are done, load em up! Top with pickled jalapeños, chopped onion and lots of cilantro🌱
