The only vegetables I ate yesterday were the mushrooms on my pizza 😂

Yesterday was a great day relaxing, catching up with friends and family on zoom and eating lots of cinnamon rolls, pizza and cookies.

Woke up today with a bit of a sugar hangover and a craving for vegetables. While I still ate a cinnamon roll for breakfast and will definitely have more Christmas cookies tonight, I needed to get some veggies in today and this broccoli was the perfect snack!

I hate raw broccoli, for some reason I just can’t stomach it but roasted broccoli is another story. I could eat plates and plates of this stuff it’s so so good!

What you’ll need:
•a head of broccoli
•olive oil
•salt and garlic powder
•pomegranates
•parmesan cheese

How to make it:
•preheat oven to 400
•cut off stem of broccoli and cut into smaller strips
•spray with olive oil and coat with garlic powder and salt
•roast in oven for 30 minutes or until crispy
•top with freshly grated parm and pomegranate seeds
•enjoy!
