Veggie Butternut Squash Chipotle Chili 🍂

Love that it’s soup season again! Nothing more filling than a hearty bowl of chili with all the toppings. This is super easy and reheats well so perfect for meal prep!

dEATS(0💙💜3💚 per serving, without toppings, making 5 servings)
-sauté a chopped yellow onion, 2 chopped bell peppers and a chopped butternut squash until onion is soft
-add 2 tablespoons of chipotle in adobo sauce and 1 chili, chopped
-add in 1 teaspoon of chili powder, 1 teaspoon of garlic powder and 1 teaspoon of cumin, stir well.
-add in 2 cans of black beans, 2 cans of diced tomatoes with chilis and 1/2 cup of vegetable broth.
-simmer for an hour or until some liquid has evaporated and butternut squash is tender.
-top with nonfat Greek yogurt, red onion, avocado and cilantro
-enjoy!
