Zaatar roasted cauliflower, quinoa and Greek salad bowl ☀️

Made this for dinner Sunday night and it was delicious! It would also be amazing for meal prep and to have for lunches throughout the week.

What you’ll need:
•quinoa

For herbed tahini dressing:
•1 tablespoon herbed tahini sauce
•lemon juice
•salt
•water (to thin)

For the zaatar roasted cauliflower:
•a head of cauliflower
•avocado oil
•1/4 cup zaatar seasoning

Greek salad:
•cucumber
•mini sweet bell peppers
•tomatoes
•red onion
•chickpeas
•parsley
•lemon juice
•red wine vinegar

How to do it:
•make quinoa. I make mine in the instantpot

For zaatar roasted cauliflower:
•preheat oven to 425
•chop cauliflower into small florets
•coat with avocado oil
•toss with zaatar
•bake for 30 minutes or until crispy

For Greek salad:
•chop all veggies and drain and rinse chickpeas
•combine in bowl
•add lemon juice and red wine vinegar. Mix well

Herbed tahini dressing
•combine herbed tahini sauce with lemon juice, salt and water to thin

Assemble bowl:
•add quinoa
•add greek salad
•add roasted cauliflower
•top with herbed tahini sauce and parsley
•enjoy!
