👩🏼🍳💚Zucchini Chocolate Chunk Oat Flour Muffins
This is a perfect treat for breakfast or tea time✨
It’s been a while I wanted to use zucchini in my baking and it’s a success, it’s so fluffy and tasty with the chocolate chunks! The zucchini brings moist to the dough.
💡I used sugar and butter, which can be replaced by maple syrup or honey or agave nectar and peanut or nut butter.
🛒 For 6 muffins:
– Half of a zucchini
– 75g of butter or peanut or nut butter
– 75g of brown sugar or 100g of maple syrup or honey or agave nectar
– 2 eggs
– 150g of oat flour
– 1 tsp of baking powder
– Sea Salt
– 100g of chocolate chunk
🔸Grate the zucchini into the center of a clean, thin dish towel.
Keep it in the towel and place it in a strainer in the sink.
🔸In your bowl, whisk together the butter, sugar, and eggs.
🔸Add the oat flour, baking powder, and sea salt. Whisk to combine.
🔸Add in the chocolate chunks to the bowl.
🔸Gather the corners and edges of the dish towel and squeeze any excess liquid from the zucchini into the sink.
🔸Place the shredded zucchini into the bowl and fold everything together.
🔸Line the muffin tins with papers and fill each tin almost all the way.
🔸Bake in a preheated oven at 180C (350F) for 25 minutes.
